Butcher paper, pink and white

Pink (peach) butcher paper is the Texas BBQ wrap: it breathes enough to keep bark crisp while a brisket rests, and it goes straight to the table as a serving sheet. White butcher paper is the classic counter wrap for meat and seafood and the cheapest table cover in the business.

18″ × 900′ White Butcher Paper. Sold by the roll; widths run 15″ for ribs and small cuts to 36″ for table covering and whole packers.

PIT TIP

Wrap the brisket in two layers, tight, seam down. Loose paper lets steam out and the flat dries.
