Portion cups, and the 2 oz rule

Soufflé cups are the small plastic portion cups for sauces, dressings, salsa and dips. They stop a leaking sauce from ruining a whole bag, and they let you portion consistently instead of by eye.

Lids for 1 oz Souffle Cups. The 1 oz is a dip or a shot of hot sauce; 2 oz is the standard side of dressing or salsa. Lids are sold separately in matching counts so you can run more cups than lids if you seal only for delivery. 2,500 per case.

PORTION TIP

One 2 oz cup of ranch costs more than the fries it goes with. Portioning by cup rather than by squeeze is where the margin is.
