Cake circles, and the size rule

A corrugated cake circle is the board the cake is built on, decorated on and carried on. Grease-proof coating stops butter migrating into the board; the corrugated core keeps a heavy layer cake flat in transit.

8″. Buy the circle two inches larger than the cake so there is a rim to hold, and one size under the bakery box so it does not slide.

DECORATOR TIP

Dab a little buttercream on the board before setting the first layer. It stops the cake sliding on the circle in the van.
